Rhubarb Sauce Recipe
Rhubarb Sauce
- 1-1/2 cups chopped rhubarb
- 1/4 cup water
- 2 tsp grated ginger root
- 1/3 cup apple cider vinegar
- 1/2 cup sugar
- 2 cups water
- 1 cup chopped red onion
- 1/4 tsp salt
- dash white pepper
Place rhubarb, 1/4 cup water and ginger root in small heavy saucepan. Simmer for 5 minutes and set aside. Combine sugar and cider vinegar with 2 cups water and bring to a rolling boil. Add the onion. Cook for 2 minutes, drain well and add to rhubarb. Season with salt and white pepper.
Serve sauce with fish.
Sweet Rhubarb Sauce
- 450 g sliced rhubarb
- 1 1/4 cup sugar (less if rhubarb is sweet)
- 1 tablespoon cornstarch
- red food coloring (optional)
Place rhubarb in a medium saucepan, add a small amount of water (about 1/2 inch). Add sugar and bring to a boil. Sower heat and simmer for 10 - 15 minutes, or until rhubarb is tender. Spoon into blender container and blend until mixture is smooth. Add cornstarch and a few drops of red food coloring, until desired color is reached. Return rhubarb sauce mixture to saucepan and bring to a boil. Reduce heat and simmer until thickened.
Serve over bread, pudding, cake, or ice cream.
