Rhubarb Smoothie Recipe

Rhubarb Ginger Smoothie

  • 75 g/3 oz cooked rhubarb
  • 40 g /1 1/2 oz stem ginger (chopped)
  • 1 tbsp. ginger syrup
  • 150 g/ 5 oz low-fat vanilla ice cream
  • ice cubes to serve
  • extra cooked rhubarb to garnish

Place the cooked rhubarb, ginger, syrup and ice cream in the blender and blend until smooth. Pour into a glass over ice and garnish with extra rhubarb.

Strawberry and Rhubarb Smoothie

  • 1 apple
  • 1 stick of rhubarb
  • 6 strawberries
  • 4 tbsp. of bio-yoghurt
  • 1tsp of honey

Cut the apple into wedges and put them through the juicer (you may use apple juice instead). Cut the rhubarb stic into chunks and place them in a saucepan with the apple juice. Cover and stew over a gentle heat for 5 - 6 minutes until the rhubarb is soft. Leave it to cool off. When cold, pour them into the blender with the roughly chopped strawberries , yoghurt and honey. Blend together.
