Strawberry Rhubarb Smoothie

  • 1 apple
  • 1 stick of rhubarb
  • 6 strawberries
  • 4 tablespoons of bio-yoghurt
  • 1teaspoon of honey

Cut the apple into wedges and put them through the juicer (you may use apple juice instead). Cut the rhubarb stick into chunks and place them in a saucepan with the apple juice. Cover and stew over a gentle heat for 5 – 6 minutes until the rhubarb is soft. Leave it to cool off. When cold, pour them into the blender with the roughly chopped strawberries, yoghurt and honey. Blend together.
